Chocolate Baked Oatmeal

Ingredients

  • 1 ripe banana
  • 1 egg
  • 1/4 cup maple syrup
  • 2 Tbsp almond butter
  • 1 cup plain unsweetened oat milk
  • 1 tsp vanilla extract
  • 1 1/2 cups rolled oats
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3 Tbsp chocolate chips
  • 1 Tbsp chocolate chips

Instructions

  • Preheat your oven to 350 and spray a baking dish with cooking spray.
  • Mash your ripe banana in a large mixing bowl. 
  • Add the remaining wet ingredients: milk, egg, maple syrup, almond butter, and vanilla extract. Stir to combine. 
  • Add the dry ingredients: oats, cocoa powder, baking powder, and salt. Stir until all ingredients are combined. 
  • Stir 3 Tbsp of chocolate chips into the mixture. 
  • Pour the mixture into your prepared baking dish and top with the remaining additional chocolate chips. 
  • Bake for 45 minutes or until a toothpick inserted in the center comes out mostly clean.
