Ingredients

  • 1 large delicata squash cut into 3/4-inch thick half-moons
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cloves garlic minced
  • 2 teaspoons maple syrup

  • pepitas pumpkin seeds
  • pomegranate seeds
  • feta cheese or dairy-free alternative
  • chopped parsley

Instructions

  • Prepare the squash: Slice the delicata squash in half lengthwise and remove the seeds. Cut into 3/4-inch thick half-moon slices.
  • Season the squash: In a large bowl, toss the squash slices with olive oil, salt, black pepper, minced garlic, and maple syrup until evenly coated.
  • Preheat the air fryer: Set the air fryer to 400°F (200°C) and preheat for 3 minutes.
  • Air fry the squash: Place the seasoned squash in a single layer in the air fryer basket. Cook for 12-15 minutes, turning halfway through, until the squash is tender and caramelized on the edges.
  • Serve: Remove the squash from the air fryer and garnish with pepitas, pomegranate seeds, feta, and chopped parsley, if desired. Serve immediately.
